Blending tradition and innovation, this apple halwa is a delicious dessert that offers the complete package for diabetics. Turning crisp apples into a sweet confection, and mixing aromatic spices and nuts, it’s a decadent, mouth-watering treat.

Serving size: 1 bowl (202g)

Ingredients

  • 2 fresh sweet apples, peeled and chopped
  • Raisins, 12g
  • Unsalted butter, ghee or olive oil, 1 tbsp
  • Stevia, 1 tbsp
  • Vanilla essence, ½ tsp
  • Cinnamon powder, ½ tsp
  • Chopped almonds for garnish

Method

  1. Heat the ghee, butter or olive oil in a pan over a medium heat. Add the chopped apples and cook for 5 minutes, stirring constantly.
  2. Cover the pan with a lid and cook for a further 10-12 minutes, stirring occasionally.
  3. Remove the lid and mash the softened apples with a spatula or masher.
  4. Add the stevia, ground cinnamon and vanilla essence, and cook for 7-10 more minutes (until the mixture releases ghee, butter or oil at the corners).
  5. Add the raisins, stir through, then remove from the heat and transfer to a serving dish.
  6. Garnish with the chopped almonds and serve hot.
