Carrot halwa

Ingredients
- 2 carrots, peeled and grated
- Non-fat milk, 1 cup
- Crushed almonds, ¼ cup
- 2 green cardamom pods, crushed and ground
- Raisins, 1½ tbsp
- Unsalted light butter or ghee, 1 tbsp
- Stevia, 1 tbsp
Method
- Heat the butter or ghee in a pan on medium heat, add the cardamoms, and fry until aromatic. Then add the carrots and sauté for 5-7 minutes.
- Add the milk and half of the almonds and raisins. Stir constantly to avoid burning at the bottom, and cook for about 5-7 more minutes.
- Add the stevia and keep stirring. Lower the heat to medium-low, and cook until the halwa thickens.
- Once the halwa has thickened, remove from the heat, transfer to a serving bowl, and garnish with the remaining almonds and raisins.
