Instant oats daleem is a perfect diabetes-friendly recipe for busy individuals. Quick and nutritious, this low-carb dish is packed with protein, fibre, iron and folate, helping fuel your body and delight your taste buds.

Serving size: 1 bowl

Ingredients

  • Chicken, 120g, boiled
  • Chicken broth, 1 cup
  • Instant oats, ½ cup (50g)
  • Mixed lentil flour, ¼ cup
  • 1 onion, finely chopped
  • Garlic-ginger paste, 1 tbsp
  • Red paprika (adjust to taste), 1 tsp
  • Turmeric, 1 tsp
  • Garam masala, 1 tsp
  • Salt (adjust to taste), 1 tsp
  • Oil, 1 tsp
  • Fresh coriander leaves, for garnish

Method

  1. To prepare the broth, add 2 cups of water to a pan along with your chicken. Boil the chicken until it becomes tender, and the water has reduced to 1 cup.
  2. Remove your chicken from the broth and set the broth aside.
  3. Separate the chicken meat from the bones and shred it (you can do this using 2 forks).
  4. In a large pot, add the shredded chicken, chicken broth, instant oats, lentil flour, chopped onion, garlic-ginger paste, garam masala, red paprika, turmeric and salt.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
  6. In a small pan, heat 1 tsp of oil.
  7. Once your oil is hot, pour it over your cooked mixture (this tempering will help bring out the flavours of the dish).
