Vegetable smoothie (cucumber, carrot, lemon, ginger, spinach)

This vegetable smoothie is a refreshing detox drink that’s perfect in the summer. High in antioxidants, anti-inflammatories, vitamins and minerals, it’s a great option for diabetics, helping to lower blood glucose levels and support overall health.

Cooking time: 5 minutes

Serves: 4

Serving size: 4 glasses (1000ml)

Ingredients

  • ½ cucumber
  • 1 carrot
  • Fresh spinach, 200g
  • 1 slice of lemon
  • Water, 700ml
  • Ginger, 1 tsp, peeled and sliced
  • Cardamom powder, 1 tsp
  • Black pepper, 1 tsp
  • Salt, ½ tsp

Method

  1. Peel the cucumber and chop it into small pieces. Then take the carrot and finely slice it.
  2. Next, take the slice of lemon and remove the rind. Then peel and slice the ginger.
  3. Transfer the prepped ingredients into a food processor, along with the 700ml water (the water should cover the ingredients).
  4. Blend on a medium-high speed until the mixture is smooth and creamy. If it looks too thick, add a bit more water and blend again for 10-20 seconds.

Storage: This smoothie can be kept in the refrigerator for 2 days.
