Vegetable smoothie (cucumber, carrot, lemon, ginger, spinach)
This vegetable smoothie is a refreshing detox drink that’s perfect in the summer. High in antioxidants, anti-inflammatories, vitamins and minerals, it’s a great option for diabetics, helping to lower blood glucose levels and support overall health.

Serving size: 4 glasses (1000ml)
Ingredients
- ½ cucumber
- 1 carrot
- Fresh spinach, 200g
- 1 slice of lemon
- Water, 700ml
- Ginger, 1 tsp, peeled and sliced
- Cardamom powder, 1 tsp
- Black pepper, 1 tsp
- Salt, ½ tsp
Method
- Peel the cucumber and chop it into small pieces. Then take the carrot and finely slice it.
- Next, take the slice of lemon and remove the rind. Then peel and slice the ginger.
- Transfer the prepped ingredients into a food processor, along with the 700ml water (the water should cover the ingredients).
- Blend on a medium-high speed until the mixture is smooth and creamy. If it looks too thick, add a bit more water and blend again for 10-20 seconds.
Storage: This smoothie can be kept in the refrigerator for 2 days.
